Holiday Cocktails

We all love the holidays and with the holidays come cocktail parties and at cocktail parties you have….COCKTAILS!!  Here at TKC we love a good cocktail and we are always on the lookout for cocktails that won’t send us on a sugar high!! And since I am not the best mixologist I went looked to two of my fav sites The Food Network and Inspired Taste

We all know that cranberries are a great source of Vitamin C and phytonutrients but did you know that they make a delicious cocktail?

Cranberry Cosmopolitan

Alton Brown's Fresh Cranberry Cosmo

Ingredients:
1 -ounce vodka
1/2 ounces Cranberry Granita, recipe follows
1/2 -ounce freshly squeezed lime juice

Cranberry Granita:
2 cups water
5 1/2 ounces cranberries, approximately 1 1/2 cups, washed and sorted
3/4 cup granulated sugar
1/2 teaspoon lime zest

Directions:
Place all of the ingredients into a cocktail shaker and shake until the granita melts completely. Pour into a martini glass and serve immediately.

Cranberry Granita:
Place the water, cranberries and sugar into a small saucepan, set over medium-high heat and simmer until the berries begin to pop, approximately 7 minutes. Remove from the heat. Puree with a stick blender, blender or food processor, for 1 minute. Pass the mixture through a fine mesh strainer directly into a metal 13 by 9-inch pan. Do not press on the skins. Simply allow the juice to drip through the strainer. Add the zest and stir to combine. Place in the freezer until set, at least 6 hours and up to overnight. Once frozen, scrape the mixture with a fork to create a shaved ice texture. Serve immediately.

Ingredients:
1 1/2 cups Prosecco, chilled
1 1/2 cups orange juice, chilled
1 1/2 cups pomegranate juice, chilled
Mint leaves, for garnish

Directions:
Combine the Prosecco, orange juice, and pomegranate juice and pour into 4 Champagne glasses. Garnish with mint leaves and serve.

Ginger Apple Martini Recipe

Ingredients:
  • 1/4 cup chopped apple
  • 1 tablespoon chopped fresh ginger
  • 4 tablespoons (2 oz) vodka
  • 2 tablespoons (1 oz) orange flavored liquor (triple sec)
  • 2 to 4 tablespoons (1 to 2 oz) white cranberry juice or apple juice
  • 1 tablespoon (1/2 oz) lime juice
  • 1 lime wedge
Directions:
  1. Using a wooden spoon, muddle apple, ginger, vodka and orange liqueur in the bottom of a cocktail shaker. Add white cranberry or apple juice and lime juice then fill shaker with ice. Shake.
  2. Strain cocktail into a martini glass then garnish with lime wedge.
