For years I have turned my nose up at tofu but a visit a few years ago to the amazing Mii Amo spa in Sedona, AZ changed my opinion of tofu for EVERA!! The chef was gracious enough to share the recipe of the tofu scramble I had for breakfast every morning during my stay. So I am sharing with all of you along with a few other of my go tofu recipes when I have over indulged..uh um..a little cheese dip anyone:):)

Three Sisters Tofu Scramble
1 Cob of Corn, grilled with kernels removed from cob
1 C Small Diced Butternut Squash, blanched and shocked
1 C Black Beans, cooked
8 oz. Tofu, crumbled by hand
2 Tbsp. Pumpkin Seeds
1-2 Tbsp. Spice Mix (see recipe below)
1 Tbsp. Grape Seed or Olive Oil
Salt and Pepper to taste
- In a large saute pan, heat the oil on high heat.
- Just as the oil begins to smoke on the edges add the tofu and let color develop.
- Add the squash, corn, beans and spice mix and continue cooking until everything is hot.
- Season to taste with salt and pepper.
Tofu Scramble Spice Mix
½ C Nutritional Yeast
1 Tbsp. Chipotle
2 Tbsp. Sugar
1 Tbsp. Garlic Powder
1 Tbsp. Onion Powder
2 Tbsp. Smoked Paprika
2 Tbsp. Spanish Paprika
1 Tbsp. Salt
- Mix all spices and yeast together in a bowl.
I mix it up a bit with whatever I have in the fridge…zucchini, squash, tomatoes, etc…just be sure to dice them…you don’t want the veggies to overtake the tofu
And you cannot forget the salsa:
|6each||Medium Red Tomatoes (small diced)|
|1||Red Onion (small diced)|
|½||Jalapeno (small diced)|
|½||Bunch Cilantro (diced)|
|Dash||Pepper or ground chili powder|
|Juice of 2||limes|
Combine all ingredients in bowl. Puree in a food processor. Season to taste. Recipe by: Mii amo Cafe
